Ingredients 食材
- 2-3 Eggs 雞蛋
- 1 Preserved egg 皮蛋
- 1 Salted egg 鹹蛋
- Chopped green onions/scallion 適量葱粒
- Seasoning 調味料:
- Seasoned Soy Sauce for Seafood 蒸魚豉油
- White pepper 胡椒粉
- 300ml Water or Chicken Broth 水或雞湯
Instructions 作法
- Peel the preserved eggs and salted eggs and cut into cubes.
- Crack the eggs, add a little white pepper and beat them.
- Add 1:1.5 times water or chicken broth to the egg liquid, mix well.
- Apply a little oil on the bottom of the plate and place the preserved eggs and salted eggs on the plate.
- Sieve the egg liquid into a plate.
- Cover with a layer of plastic wrap
- Bring the water in the steamer to a boil, then place the egg mixture and the plate into the steamer and steam for 16-18 minutes. When the eggs are almost done, shake the steamer to see if they are cooked.
- After steaming, sprinkle with chopped green onion and Seasoned Soy Sauce for Seafood.
- 將皮蛋、鹹蛋去殻,切丁。
- 將雞蛋打開,加ㄧ點白胡椒粉,打散。
- 雞蛋液中加入1:1.5倍的水或雞湯,再攪拌均勻
- 盤底抹一點油,將皮蛋、鹹蛋排在盤上
- 將雞蛋液過篩倒入盤中
- 上面蓋一層保鮮膜
- 將蒸鍋的水煮滾,再將蛋液混合物連盤子一起放入蒸鍋中,蒸 16-18 分鐘。快好時,可搖動蒸鍋看看蛋是否熟了
- 蒸好後,上面撒上葱花、蒸魚豉油
