Recipe: Three-color Steamed Eggs 三色蒸水蛋

Ingredients 食材

  • 2-3 Eggs 雞蛋
  • 1 Preserved egg 皮蛋
  • 1 Salted egg 鹹蛋
  • Chopped green onions/scallion 適量葱粒
  • Seasoning 調味料:
    • Seasoned Soy Sauce for Seafood 蒸魚豉油
    • White pepper 胡椒粉
    • 300ml Water or Chicken Broth 水或雞湯

Instructions 作法

  1. Peel the preserved eggs and salted eggs and cut into cubes.
  2. Crack the eggs, add a little white pepper and beat them.
  3. Add 1:1.5 times water or chicken broth to the egg liquid, mix well.
  4. Apply a little oil on the bottom of the plate and place the preserved eggs and salted eggs on the plate.
  5. Sieve the egg liquid into a plate.
  6. Cover with a layer of plastic wrap
  7. Bring the water in the steamer to a boil, then place the egg mixture and the plate into the steamer and steam for 16-18 minutes. When the eggs are almost done, shake the steamer to see if they are cooked.
  8. After steaming, sprinkle with chopped green onion and Seasoned Soy Sauce for Seafood.
  1. 將皮蛋、鹹蛋去殻,切丁。
  2. 將雞蛋打開,加ㄧ點白胡椒粉,打散。
  3. 雞蛋液中加入1:1.5倍的水或雞湯,再攪拌均勻
  4. 盤底抹一點油,將皮蛋、鹹蛋排在盤上
  5. 將雞蛋液過篩倒入盤中
  6. 上面蓋一層保鮮膜
  7. 將蒸鍋的水煮滾,再將蛋液混合物連盤子一起放入蒸鍋中,蒸 16-18 分鐘。快好時,可搖動蒸鍋看看蛋是否熟了
  8. 蒸好後,上面撒上葱花、蒸魚豉油
