Recipe: Green Onion Cheese Bread 香蔥起司麵包

Ingredients 食材

  • Dough 麵團
    • 250 g bread flour 高筋麵粉
    • 120 g cold milk 冰牛奶
    • 40 g sugar 糖
    • 3 g (1 tsp) instant yeast 速發乾酵母
    • 3 g salt 鹽
    • 1 egg 蛋
    • 30 g room temperature unsalted butter 室溫無鹽奶油
  • Fillings 餡料
    • 200 g mozzarella cheese 馬蘇里拉起司
    • 20 g scallion 葱花
    • 1 tsp oil 油
    • Cheddar cheese powder 切達起司粉

Instructions 作法

  1. Add all dough ingredients (except egg) together, mix well and use mixer to knead the dough for 3-4 minutes.
  2. Add in room temperature butter, mix and knead until it can spread as thin see through surface.
  3. Covered, Let it sit in the room temperature for 1 hour.
  4. After 1 hour, take it out, push the air out.
  5. Divide the dough into 8 pieces, roll each piece into a ball, covered and let it sit for 10 minutes.
  6. Take each one out (one at a time), press it and push air out, then flip over, then roll it out thinner, then put the fillings (mozzarella cheese) inside on one end, then roll over the dough and push the edge to close it tight, roll into a roll.
  7. Put them on the baking sheet.
  8. Slit the top but not cut through
  9. Covered, let it sit for 50 minutes
  10. Cut scallions and add some oil (might need to add some salt if no cheddar cheese powder added on top)
  11. Preheat the Oven on 185°C(370°F)
  12. After 50 minutes, brush egg washing on top of the dough, add some mozzarella cheese to top, then add green onion on top (also add cheddar cheese powder if you have any)
  13. bake for 15 minutes

  7. 將它們放在烤盤上
  8. 將頂部割劃開但並不切穿
  9. 蓋上蓋子,靜置50分鐘
  10. 切蔥,加點油(如果上面沒有加切達起司粉,可能需要加點鹽)
  11. 將烤箱預熱185°C(370°F)
  12. 50分鐘後,在麵團上刷上蛋液,在上面加一些馬蘇里拉起司,然後在上面加蔥(如果有的話也可以加切達乾起司)
  13. 烤15分鐘
