Recipe: Deep-fried Pork Ribs 酥炸排骨酥

Ingredients 食材

  • 600 g Pork Ribs 豬小排
  • Marinate sauce 醃料:
    • 0.5 Tbsp White pepper 白胡椒
    • 0.5 Tbsp Black pepper 黑胡椒
    • ¼ tsp cinnamon 肉桂粉
    • ¼ tsp five spice powder 五香粉
    • 3 Tbsp sugar 砂糖
    • 90-100 g soy sauce 醬油
    • 2 Tbsp oyster sauce 蠔油
    • 100 g water 水
    • 100 g cooking wine 米酒
  • 1 egg 蛋
  • 80 g sweet potato starch 地瓜粉/蕃薯粉

Instructions 作法

  1. marinate rib for 2 hours or overnight
  2. Take out the ribs from refrigerator, add 1 egg
  3. Add 80 g sweet potato starch, mix all together
  4. Fried pork ribs, if use air fryer, brush oil in the pot, put in the ribs, spread oil on top of the ribs, close the lid, follow your fryer instructions to fry (maybe about 30 minutes)
  1. 豬小排用醃料醃 2 小時或過夜
  2. 從冰箱取出排骨,加入1顆蛋
  3. 加入80克地瓜粉,攪拌均勻
  4. 炸排骨,如果用氣炸鍋,鍋裡刷油,放入排骨,在排骨上抹上油,蓋上蓋子,按照炸鍋說明炸(大概30分鐘左右)
