Ingredients 食材
- 600 g Taro 芋頭
- 800 g Water 水
- 100 g Sago 西米
- 400 g Coconut Milk 椰奶
- 2 Tbsp Rock sugar (Adjust according to your own taste) 冰糖適量
Instructions 作法
- Peel taro, cut the taro into chunks, add two cups of water to the outer pot of a rice cooker, and steam it in the rice cooker.
- Put 1500 g of water into a pot and bring to boil, then add sago and cook over medium heat, stirring every few minutes to avoid sticking to the pot. Cook until the outside of the sago becomes transparent and a little solid remains in the middle, then turn off the heat, cover the pot and let it sit for 30 minutes.
- When the sago is completely transparent, drain off the water (Pour the sago into a fine mesh strainer) and place the sago (with mesh strainer) in water with ice cubes to chill for at least 15 minutes.
- Put half of the steamed taro into a large bowl, pour in 400 g of coconut milk, pour in 800 g of water, blend with a blender until thick, pour into a pot and heat it up, add 2 tablespoons of rock sugar, Bring to a boil over low heat and stir constantly. Once boiling, add the other half of the taro cubes. (I just add coconut milk and sugar water to all the cooked taro and then mix).
- Add sago and serve.
- 600 g 芋頭去皮切成塊狀,外鍋加兩杯水,放入電鍋中蒸熟。
- 將 1500 g 水放入鍋中煮沸,然後加人 100 g 西米用中火煮熟,每隔數分鐘翻動一下,避免沾鍋。煮到西米外面呈現透明狀中間留一點米心後,關火,蓋上鍋蓋燜 30 分鐘。
- 等西米完全呈現透明狀時,把水瀝掉 (把西米倒在一個細網的漏杓中),將西米 (連漏杓一起) 放入有冰塊的冰水裏冰鎮至少 15 分鐘。
- 將一半蒸熟的芋頭放入一個大碗中,倒入 400 g 椰奶,倒入 800 g 水, 用調理機或果汁機打成濃稠狀,倒入鍋中加熱,加 2 大匙 冰糖,小火煮至沸騰並不斷攪動,煮滾後放入另一半芋頭塊。(我把全部的芋頭直接加椰奶,細砂糖加些水作成糖水,全部混合起來)。
- 加入西米後便可食用。
