- Egg 蛋
- Cold cooked rice 剩飯
- Scallion/green onions 蔥
- Salt, White Pepper Powder, Oyster sauce, dark soy sauce 鹽、胡椒粉,蠔油、老抽
Instructions 作法
- Crack several eggs into a bowl
- Beat the egg with chopsticks and coat each grain of rice with egg. Set aside and let it sit for 5 minutes.
- Chop the green onions into chopped pieces, separating the white and green parts.
- Heat oil in a wok. Add the scallion whites first and stir-fry over low heat until the scallion aroma comes out.
- Add the rice and egg mixture to the pan and stir-fry briefly. Stir-fry for about 4 minutes, until the surface of the rice is set. Add some cold oil and stir-fry for another 2-3 minutes, stirring occasionally, until all the moisture is removed.
- Add a little salt, pepper, appropriate amount of oyster sauce and dark soy sauce, and stir-fry quickly over high heat to make the fried rice colorful and tasty and dry.
- Add chopped green onions and stir-fry quickly over high heat until the green onions change color and release their fragrance. Remove from heat and serve.
- 將數個蛋打入碗中
- 在碗中加入沒吃完的剩飯
- 用筷子將蛋打勻,並讓每粒飯都裹上蛋,放ㄧ旁,靜置 5 分鐘
- 將蔥切成蔥花,蔥白及綠蔥分開。
- 在鍋中加油,燒熱。先加蔥白,用小火煸炒,炒出蔥香味。
- 鍋中加入拌勻蛋的米飯,快速翻炒一下。炒 4 分鐘左右,至米飯表面凝固。再加ㄧ些冷油,快速翻炒 2-3 分鐘,將水氣炒乾。
- 加一點鹽、胡椒粉,適量蠔油、老抽,再用大火快速翻炒一下,讓炒飯上色入味並炒乾一些。
- 加入蔥花,再用大火快速翻炒,將蔥花炒至變色,炒出蔥香味。就可出鍋裝盤。
