Recipe: Shrimp Lettuce Wraps 生菜蝦鬆

Ingredients 食材

  • 300g shrimps 蝦仁
  • 100g water chestnut 荸薺
  • 10g ginger 薑末
  • 20g scallion 蔥花
  • fried bread stick (youtiao) 油條
  • 1 Tbsp cooking rice wine 米酒
  • Seasoning 調味料:
    • 1 Tbsp egg white 蛋白
    • ¼ tsp salt 鹽
    • ¼ tsp ground white pepper 白胡椒粉
    • ½ tsp sugar 細砂糖
    • 2 tsp tapioca starch 太白粉
    • 1 Tbsp sesame oil 香油

Instructions 作法

  1. Trim the edges of the lettuce into an oval shape.
  2. Put water chestnuts into a plastic bag and crush them.
  3. Pat the shrimp dry and cut them into small dice.
  4. Mix the diced shrimp with all the marinade ingredients (except sesame oil), then drizzle with sesame oil and mix well.
  5. Heat the pan, add 1 tablespoon of oil, add the shrimp and stir-fry until it turns red, then add the minced ginger, water chestnuts and chopped green onions and stir-fry evenly.
  6. Finally, add rice wine and stir well to make shrimp shreds.
  7. Add fried bread sticks (youtiao) to lettuce and add shredded shrimp.
  1. 生菜將邊緣修剪掉,呈橢圓形。
  2. 荸薺放入塑膠袋中拍碎。
  3. 蝦仁擦乾,切小丁。
  4. 蝦丁與所有醃料(香油除外)混合抓勻,最後再淋上香油拌勻。
  5. 熱鍋,加入1大匙油,放入蝦仁炒至變紅,再放入薑末、荸薺、蔥花翻炒均勻。
  6. 最後加入米酒炒勻,即為蝦鬆。
  7. 生菜放入油條,加上蝦鬆即可。
