Ingredients 食材
- 300g shrimps 蝦仁
- 100g water chestnut 荸薺
- 10g ginger 薑末
- 20g scallion 蔥花
- fried bread stick (youtiao) 油條
- 1 Tbsp cooking rice wine 米酒
- Seasoning 調味料:
- 1 Tbsp egg white 蛋白
- ¼ tsp salt 鹽
- ¼ tsp ground white pepper 白胡椒粉
- ½ tsp sugar 細砂糖
- 2 tsp tapioca starch 太白粉
- 1 Tbsp sesame oil 香油
Instructions 作法
- Trim the edges of the lettuce into an oval shape.
- Put water chestnuts into a plastic bag and crush them.
- Pat the shrimp dry and cut them into small dice.
- Mix the diced shrimp with all the marinade ingredients (except sesame oil), then drizzle with sesame oil and mix well.
- Heat the pan, add 1 tablespoon of oil, add the shrimp and stir-fry until it turns red, then add the minced ginger, water chestnuts and chopped green onions and stir-fry evenly.
- Finally, add rice wine and stir well to make shrimp shreds.
- Add fried bread sticks (youtiao) to lettuce and add shredded shrimp.
- 生菜將邊緣修剪掉,呈橢圓形。
- 荸薺放入塑膠袋中拍碎。
- 蝦仁擦乾,切小丁。
- 蝦丁與所有醃料(香油除外)混合抓勻,最後再淋上香油拌勻。
- 熱鍋,加入1大匙油,放入蝦仁炒至變紅,再放入薑末、荸薺、蔥花翻炒均勻。
- 最後加入米酒炒勻,即為蝦鬆。
- 生菜放入油條,加上蝦鬆即可。
