Ingredients 食材
- 2 eggplants 茄子
- Salt 鹽
- 2 red chili pepper 小米椒
- 4 cloves garlic 大蒜
- 1 Tbsp soy sauce 生抽,少許老抽
- 1 Tbsp oyster sauce 蠔油
- 1/2 Tbsp Sugar 白糖
- 1/2 bowl of water 清水
- 1 Tbsp starch 淀粉
- 1 scallion 蔥
Instructions 作法
- Prepare two eggplants and cut off the heads and tails.
- Cut the eggplants into small wedges.
- Soak the cut eggplants in water for 5 minutes to prevent oxidation and blackening.
- After 5 minutes, take out the eggplants, put them in a bowl, add two teaspoons of salt, and mix evenly so that every piece of eggplants is coated with salt. Set aside, let them sit for 15 minutes.
- Cut 2 chili peppers into rings.
- Crushed and minced 4 cloves of garlic.
- Making the sauce: add 1 spoon of light soy sauce, a little dark soy sauce, 1 spoon of oyster sauce, half a spoon of sugar, and half a bowl of water. Mix well.
- After 15 minutes, squeeze the eggplants dry so that it won't absorb oil when stir-fried.
- Add 1 tablespoon of starch to the squeezed eggplant. Stir/mix evenly. (Just a thin layer)
- Add oil to the pot. When the oil is hot, pour the eggplants into the pot. Fry the eggplants over medium heat until both sides are slightly brown. Take them out and set aside.
- Add oil to the pot, add red chili pepper and garlic, stir-fry until fragrant. Add eggplants to the pot, stir-fry evenly. Then pour the sauce, cover the pot and simmer for 5 minutes.
- After 5 minutes, open the lid, turn off the heat, and sprinkle with chopped green onion. Ready to serve.
- 準備兩根茄子,切掉頭尾。
- 把茄子切成滾刀塊。
- 把切好的茄子放到清水裏浸泡 5 分鐘,以防止氧化變黑。
- 5 分鐘後把茄子撈出來,放到碗裏,加兩茶匙鹽,抓拌均勻,讓每塊茄子都能沾到鹽。之後,放置一邊,靜置 15 分鐘。
- 將 2 顆小米椒切圈。
- 4粒大蒜拍扁,再切碎
- 調醬汁:加 1 匙生抽,少許老抽,1 匙蠔油,半匙白糖,小半碗清水。攪拌均勻。
- 15 分鐘後把茄子擠乾,炒時才不會吸油。
- 在擠乾的茄子上加1匙淀粉,翻拌均勻 (薄薄一層即可)。
- 鍋中加油,油熱後將茄子倒入鍋中,用中火將茄子煎一下至兩面微黃,即可盛出備用。
- 鍋中加油,倒入小米椒及大蒜,將之炒香,把茄子加入鍋中,翻炒均勻。然後淋上醬汁,蓋上鍋蓋,燜 5 分鐘。
- 5 分鐘後把蓋子打開,關火,撒上蔥花。即可盛出食用。
