Recipe: Garlic Butter Loaf 蒜香手撕面包

Ingredients 食材

  • #1 Dough 麵團:
    • 200 g Bread flour/All-purpose flour 高筋面粉/中筋面粉
    • 3 g Instant Yeast 速發乾酵母
    • 15 g Sugar 糖
    • 1 Egg 蛋
    • 2 g (1⁄4 tsp) Salt 鹽
    • 85 g Cold Milk 冰牛奶
    • 20 g Unsalted Butter 無鹽奶油
  • #2 Garlic butter sauce 奶油蒜泥酱:
    • 40 g Unsalted Butter 無鹽奶油
    • 20 g (5pcs) Garlic 蒜 (5瓣)
    • ¼ tsp Salt 鹽
  • #3 Top Decoration 頂部配料:
    • Egg liquid 雞蛋液
    • Sesame seeds 白芝麻
    • Scallions 葱

Instructions 作法

  1. Mix the first few ingredients (#1, except butter) (add milk gradually) for the dough. Mix and knead it together. Let it rest in the refrigerator for 30 minutes
  2. After taking the dough out from the refrigerator then knead it again.
  3. Then add in butter in the dough. Continue kneading until all the butter in the dough is very smooth. Then continue knead and drop (搓及摔打) for 15 minutes
  4. Covered. Let it sit and rise about 1 hour
  5. Make garlic butter sauce (heat up butter and then add minced garlic)
  6. After 1 hour, take dough out, push the air out, roll it into a big rectangular dough
  7. Spread garlic sauce on top of dough, then add some green scallion
  8. Then use pizza roller to cut into 18 pieces (3x6)
  9. Then every 3 pieces pile them up as a set
  10. Then put them into the bread loaf pan, let it stand up
  11. Covered. Then let it rise for 30 minutes
  12. Brush egg wash on top, then add some green scallion and sesame seeds on top
  13. Preheat the Oven 170°C(340℉), baking for 23 minutes
