Four types of Stir-fried noodles
《English》 1-Taiwanese-style stir-fried noodles
Ingredients
- 800 g alkaline noodle
- 250 g pork
- 50 g shallot
- 20 g dried shrimps
- 40 g shiitake mushroom
- 70 g carrot
- 250 g cabbage
- 250 cc water
- 30 g chinese celery
- Marinade:
- 1/2 tsp soy sauce
- 1 tsp cooking rice wine
- 1 tsp potato starch
- Seasoning:
- 1/2 tsp salt
- 1/4 tsp sugar
- 1/4 tsp white pepper
- 2 Tbsp soy sauce
- 1 Tbsp cooking rice wine
- 1/2 Tbsp black rice vinegar
Instructions
- Briefly blanch the oil-fried noodles in hot water
- Mix the shredded meat with the seasonings and marinate for about 5 minutes.
- Sauté shallots until fragrant, then add marinated shredded pork and stir-fry. Add dried shrimp, soaked shiitake mushroom strips, shredded carrots, salt, sugar, soy sauce, and rice wine, and stir-fry until well combined.
- Add the noodles, cabbage, and water, stir-fry, and simmer for about 1 minute. Before serving, add pepper, chopped celery, and black vinegar.
《中文》 1-台式大麵炒
食材
- 800 公克 油麵
- 250 公克 肉絲
- 50 公克 紅蔥頭
- 20 公克 蝦米
- 40 公克 泡發香菇絲
- 70 公克 紅蘿蔔絲
- 250 公克 高麗菜
- 250 cc 水
- 30 公克 芹菜末
- 醃料:
- 1/2 茶匙 醬油
- 1 茶匙 米酒
- 1 茶匙 太白粉
- 調味料:
- 1/2 茶匙 鹽
- 1/4 茶匙 糖
- 1/4 茶匙 白胡椒粉
- 2 大匙 醬油
- 1 大匙 米酒
- 1/2 大匙 烏醋
作法
- 油麵先用熱水略汆燙
- 肉絲與調味料拌勻,醃約5分鐘
- 將紅蔥頭爆香後加入醃過的肉絲拌炒,再加入蝦米、泡發香菇絲、紅蘿蔔絲、鹽和糖、醬油和米酒拌炒均勻
- 再放入油麵及高麗菜、水,拌炒後燜約1分鐘,起鍋前加入胡椒粉、芹菜末及烏醋即可
《English》 2-Guangzhou stir-fried noodles
Ingredients
- 350 g fried Noodles
- 150 g neritic squid
- 100 g squid
- 10 g shrimps
- 3 bok choy
- 20 g scallion
- 3 shiitake mushroom
- 30 g carrot
- 20 g onion
- 2 Tbsp soy sauce
- 1 Tbsp cooking rice wine
- 1/2 tsp salt
- 1 tsp sugar
- 1/4 tsp white pepper
- 500 cc water
- corn starch & water
Instructions
- Boil the fried noodles and then scoop them out.
- Mix in 1 tablespoon of oil and fluff the noodles to cool.
- Pan-fry the noodle in the same pan until golden brown on both sides, then remove and set aside.
- Sauté scallions and onions until fragrant, then add carrots, fresh shiitake mushrooms, squid, and soaked squid.
- Season with soy sauce, rice wine, salt, sugar, and white pepper.
- After boiling, add an appropriate amount of cornstarch slurry to thicken.
- Pour the fried noodles over the top.

食材
- 350 公克 廣式生麵條
- 150 公克 透抽
- 100 公克 泡發魷魚
- 10 尾 蝦仁
- 3 顆 青江菜
- 20 公克 蔥段
- 3 朵 新鮮香菇
- 30 公克 胡蘿蔔片
- 20 公克 洋蔥片
- 2 大匙 醬油
- 1 大匙 米酒
- 1/2 茶匙 鹽
- 1 茶匙 糖
- 1/4 茶匙 白胡椒粉
- 500 cc 水
- 適量 太白粉水
作法
- 先將廣炒麵煮滾撈起
- 拌入 1 匙油且將麵糰撥鬆攤涼
- 用原鍋將麵糰兩面煎至焦黃後起鍋備用
- 爆香蔥段與洋蔥,接著加入胡蘿蔔、鮮香菇、透抽與泡發魷魚
- 加入醬油、米酒、鹽、糖、白胡椒粉調味
- 煮滾後加入適量太白粉水勾芡
- 最後淋上煎好的廣州炒麵即可
《English》 3-Satay Beef stir-fried noodles
Ingredients
- 600 g yimen noodles
- 3 Tbsp Sa cha paste
- 2 Tbsp soy sauce
- 1/4 tsp salt
- 1/2 tsp sugar
- 50 cc water
- 15 g chili
- 15 g garlic
- 300 g bok choy
- 50 cc water
- 70 g onion
- Beef marinade
- 250 g beef
- 1 Tbsp soy sauce
- 1 Tbsp cooking rice wine
- 1 Tbsp corn starch & water
Instructions
- Mix all the marinade ingredients with the beef and set aside.
- Cook fresh Knife-shaved noodles for about 3 minutes
- Sauté garlic slices, chili slices, and onions until fragrant.
- Then add satay sauce and stir-fry until it releases its aroma.
- Add the beef and stir-fry until it's about 70% cooked, then add soy sauce and mix well with the noodles.
- Season with a little salt, sugar, and water.
- Finally, add the greens and mix well.
《中文》 3-沙茶牛肉炒麵
食材
- 600 公克 意麵
- 3 大匙 沙茶
- 2 大匙 醬油
- 1/4 茶匙 鹽
- 1/2 茶匙 糖
- 50 cc 水
- 15 公克 辣椒片
- 15 公克 蒜片
- 300 公克 小白菜
- 50 cc 水
- 70 公克 洋蔥
- 牛肉醃料:
- 250 公克 牛肉片
- 1 大匙 醬油
- 1 大匙 米酒
- 1 大匙 太白粉
作法
- 先將所有醃料與牛肉抓勻備用
- 新鮮刀切麵煮約 3 分鐘
- 爆香蒜片、辣椒片、洋蔥
- 接著加入沙茶炒至散發出香氣
- 加入牛肉炒至七分熟後加入醬油與麵條拌勻
- 撒上些許鹽、糖、水調味
- 最後加入青菜拌勻即可
《English》 4-Curry stir-fried noodles
Ingredients
- 800 g alkaline noodle
- 60 g carrot
- 100 g onion
- 250 g pork
- 20 g chili
- 15 g garlic
- 150 g bok choy
- 400 g water
- 1/2 tsp salt
- 1/2 tsp sugar
- 6 Tbsp curry powder
- 6 Tbsp oil
Instructions
- Heat the oil to approximately 150 degrees Celsius, then pour in the curry powder (1:1 ratio).
- Heat a pan and cook the egg noodles for about two minutes, then remove from the pan and set aside.
- After sautéing the chili peppers, garlic, and onions until fragrant, add the shredded meat and carrots and stir-fry.
- Pour in hot curry oil, water, salt, and sugar to taste.
- Stir-fry the noodles until combined, then mix in the bok choy.
《中文》 4-咖哩炒麵
食材
- 800 公克 油麵
- 60 公克 胡蘿蔔絲
- 100 公克 洋蔥絲
- 250 公克 豬肉絲
- 20 公克 辣椒片
- 15 公克 蒜片
- 150 公克小白菜
- 400 cc 水
- 1/2 茶匙 鹽
- 1/2 茶匙 糖
- 6 大匙 咖哩粉
- 6 大匙 油
作法
- 將油加熱至約150度後沖入咖哩粉(比例1:1)
- 熱鍋煮雞蛋麵約兩分鐘後起鍋備用
- 爆香辣椒、蒜頭與洋蔥後,加入肉絲與胡蘿蔔絲拌炒
- 倒入咖哩熱油、水、鹽與糖調味
- 加入麵條炒勻之後再拌入小白菜即可
