Prose 生活隨筆: Pupusa 普普沙

I recently discovered a Saturday morning ritual right in my neighborhood: a local food stall serving a dish I’d never tried before called pupusas. These are thick, hand-pressed corn tortillas stuffed with savory fillings like melted cheese (queso), refried beans, seasoned pork (chicharrón), or other fillings, then griddled until they reach a perfect golden brown.

The vendor, who prepares them fresh to order, explained that pupusas are the national dish of El Salvador. They became a staple in the U.S. during the 20th century as Central American families brought their culinary traditions with them. Watching the dough being filled and sizzled on the griddle right in front of me made the experience even better—the result was incredibly fresh and delicious. Moments like this remind me how fortunate we are to live in such a multicultural society; it keeps us open-minded and allows us to "travel" through our taste buds.
