Recipe: Teochew Style Fried Glass Noodles 潮式炒冬粉

Ingredients 食材

  • 3 pack glass noodles 冬粉
  • 100 g shred pork 肉絲
  • 10 g garlic 蒜末
  • 10 g shallots 紅蔥末
  • 20 g dried shrimps 蝦米
  • 20 g shiitake mushroom 泡發香菇
  • 100 g cabbage 高麗菜絲
  • 150 ml water 水
  • 2 Tbsp fish sauce 魚露
  • 2 tsp dark soy sauce 老抽
  • 1 tsp white pepper powder 白胡椒粉
  • q.s. chopped cilantro 香菜末

Instructions 作法

  1. Heat a wok, add 1 Tbsp of oil, sauté minced garlic and shallots until fragrant, then add dried shrimp and soaked shiitake mushrooms and sauté until fragrant.
  2. Add shredded pork and stir-fry until it turns white, then add shredded cabbage and stir-fry evenly.
  3. Add water, fish sauce, dark soy sauce, white pepper powder, and glass noodles, stir-fry until well combined, and then simmer until the sauce thickens.
  4. Add some chopped cilantro before serving to enhance the flavor.
  1. 熱鍋,倒入 1 大匙油,加入蒜末、紅蔥末爆香,再放入蝦米、泡發香菇炒香。
  2. 加入肉絲炒至變白,下高麗菜絲炒勻。
  3. 加水、魚露、老抽、白胡椒粉、冬粉炒勻後,燒煮至收汁。
  4. 起鍋前加點香菜末提味即可。
