Ingredients 食材 (for 8)
- 8-10 Eggs 蛋
- 3 bags of black tea 紅茶包
- 60 g soy sauce 醬油
- 10 g rock sugar 冰糖
- 1 star anise 八角
- 4 sticks Cinnamon stick 肉桂
- some Dried Chili Pepper 乾辣椒
- 750 g water 水
Instructions 作法
- Poke a hole in the egg and put it in cold water. Simmer for 6 minutes after the water boils.
- Remove the eggs and put them in ice water to cool down.
- In another pot, add 750 g water. After the water boils, add rock sugar, soy sauce, dried chili peppers, cinnamon sticks, star anise, and tea bags.
- Crack the boiled egg slightly and poke it with a thumbtack.
- When the sauce boils, add the eggs and simmer for 2 hours. Add water as needed to keep the sauce submerged.
- Boil over high heat for a while, then turn off the heat and soak for 1 hour.
- 將蛋戳洞後冷水下鍋,水滾後燜 6 分鐘起鍋
- 將蛋撈起後放入冰水降溫
- 另起一鍋加水 750 克,水滾後加入冰糖、醬油、乾辣椒、肉桂、八角、茶包
- 將煮好的蛋稍微敲破後,再用圖釘戳一下
- 醬汁滾了之後加入蛋,小火滾煮2小時,並可適時補水,保持淹過的量
- 大火再滾一下後關火泡1小時即可完成
