Recipe: Chinese Tea Eggs 茶葉蛋

Ingredients 食材 (for 8)

  • 8-10 Eggs 蛋
  • 3 bags of black tea 紅茶包
  • 60 g soy sauce 醬油
  • 10 g rock sugar 冰糖
  • 1 star anise 八角
  • 4 sticks Cinnamon stick 肉桂
  • some Dried Chili Pepper 乾辣椒
  • 750 g water 水

Instructions 作法

  1. Poke a hole in the egg and put it in cold water. Simmer for 6 minutes after the water boils.
  2. Remove the eggs and put them in ice water to cool down.
  3. In another pot, add 750 g water. After the water boils, add rock sugar, soy sauce, dried chili peppers, cinnamon sticks, star anise, and tea bags.
  4. Crack the boiled egg slightly and poke it with a thumbtack.
  5. When the sauce boils, add the eggs and simmer for 2 hours. Add water as needed to keep the sauce submerged.
  6. Boil over high heat for a while, then turn off the heat and soak for 1 hour.
  1. 將蛋戳洞後冷水下鍋,水滾後燜 6 分鐘起鍋
  2. 將蛋撈起後放入冰水降溫
  3. 另起一鍋加水 750 克,水滾後加入冰糖、醬油、乾辣椒、肉桂、八角、茶包
  4. 將煮好的蛋稍微敲破後,再用圖釘戳一下
  5. 醬汁滾了之後加入蛋,小火滾煮2小時,並可適時補水,保持淹過的量
  6. 大火再滾一下後關火泡1小時即可完成
